cast are made from heated blocks of bronze, rolled flat, pressed into shape, cut to size, then lathed and hammered to specs per the cymbal series, line etc...

sheet are stamped from premade sheets of bronze then cut to size. sheet cymbals are only used in beginner lines.

sheet bronze cymbals i believe, are hammered from sheets of bronze that are cut from solid bars and machine-lathed into a cymbal shape.
cast bronze cymbals are made the old fashioned way by forging the bronze and hammering them into a shape.
this is usually why entry-level cymbal series are primarily sheet bronze and higher level series are cast bronze.
